A dark chocolate bar using Haitian cacao and crafted by Palette de Bine in Mont-Tremblant, Québec.
Christine Blaise has sourced the beans for this dark chocolate bar via Uncommon Cacao. The Haitian beans were grown and processed by Produits Des Iles SA (Pisa). Located in Nothern Haiti, Pisa is working with an association of over 1,500 smallholder farmers (over 400 of whom are female). They are focused on improving the post-harvest practices for cacao and to reveal the best of relatively undiscovered and underrated origin.
These beans typically have notes of ‘ fig, tart cherry, and lightly roasted nuts’, all of which come through in Palette de Bine’s bar.
This bar won Gold at the Academy of Chocolate Awards 2016 – Americas competition.
