A dark chocolate bar crafted by Palette de Bine in Mont-Tremblant, Québec.
Moulded to look like a plank, the bar is soft but not entirely smooth, with just a touch of graininess. The aroma mixes sharp and sweet notes that evoke apricot jam. Ripe mandarins, candied orange peel and a spritz of bergamot meld together on the tongue. The sharpness that lurks underneath throughout is revealed in a tart finish that perfectly balances the bar’s sweetness with a fruity acidity.
Chocolate maker Christine Blais has sourced her beans from Kokoa Kamili in the Kilombero Valley of Tanzania. An increasingly popular cacao, we are seeing more and more bars using Kokoa Kamili’s beans. The organisation works with local farmers, buying beans at above market prices and improving post-harvest processes. By carefully controlling the fermentation, Kokoa Kamili is able to coax the best out of the farmers’ beans. Once dried they are shipped to Christine in Canada to continue what Kokoa Kamili and the farmers started, and create chocolate that celebrates the bean.
