A dark chocolate bar using Vietnamese cacao and crafted by Palette de Bine in Mont-Tremblant, Québec.
The chocolate has a deep brown hue. Like all of Palette de Bine’s bars, it has molded to look like a plank of wood – a reminder of where cacao ultimately comes from. In this case Christine of Palette de Bine has sourced cacao beans grown in the landlocked province of Lam Dong in Vietnam. Cacao is grown in small farms at the Western Highlands (Tây Nguyên in Vietnamese). The rich basalt soil and slightly elevated altitude is perfect for growing cacao.
This bar won Bronze at the International Chocolate Awards 2016 – Americas competition and achieved a Silver at the Academy of Chocolate Awards 2017.
A powerful dark with plenty of fruit and wooded notes. Some sharp forest berries continue into earthier flavours. A touch of wood and smoke lend a more savoury note.
