This dark chocolate bar uses cacao beans from Guatemala. It was hand-made by Palette de Bine in Mont-Tremblant, Québec.
Christine from Palette de Bine has sourced her cacao beans for this bar through Uncommon cacao. Uncommon has partnered with an association of almost 500 smallholder farmers in the Polochic Valley of Guatemala, one of the hottest micro-climates in Guatemala. As well as cacao they also grow coffee and produce honey! Significantly, the Valley is right next to La Reserva de Biosfera Sierra de las Minas, a forest reserve. As well as their commercial activities he farmer association is also responsible for protecting the reserve.
This bar won Bronze at the International Chocolate Awards 2016 – Americas competition.
The chocolate is sweet and delicate. We tasted some caramel as well as toasted nuts.
