From a new 'kid' on the UK bean to bar chocolate block we have an absolutely wonderful bar. It is made with fine Criollo-esque cacao sourced from the highly regarded northern coast of Venezuela which also produces fantastic cacao from the likes of Chuao, Cuyagua, Ocumare and Choroni. Patanemo has also been used by Mast Brothers, but in that instance they used a much heavier, lengthier roast. Here Chris used a much lighter touch and has managed to bring out some very interesting flavours.
I found tobacco, salinity, dry alpine forest all mixed with Cornish clotted cream and with a strawberries and cream finish.
If you prefer chocolate much further away from the dark roasts of Pralus and more into soft, wistful flavours then this chocolate should excite you. It is a personal favourite of mine.
