This dark chocolate from Ritual uses Ecuadorian cocoa beans from Camino Verde in Guayas province. Camino Verde is a family-owned plantation that was recently restored, and now grows Ecuador’s renowned ‘Nacional’ cocoa beans.
These beans are the same as those used in Ritual’s Ecuador 75% bar. By upping the percentage just a little it has produced a bar that is similar to the 75% Ecuador but still has its own distinctive profile.
The chunky chocolate has an almost thick texture that is nevertheless buttery. It melts smoothly and quickly giving you an instant hit of flavour. A little sweetness accompanies green, notes reminiscent of asparagus and peas. There is a touch of sherbet that gives a little buzz without being too astringent, while the aroma seems drizzled with honey.
Overall, we found this quite a mellow Ecuadorian. The creamy taste and mouthfeel soften the more intense vegetal notes.
