This Honduras Mayan Red dark chocolate has been beautifully crafted by Ruket; Italian makers based in Ferrara, north-east Italy.
For this bar, Ruket used exclusively Trinitario beans. In order to source this specific cocoa varietal Ruket worked with Xoco, one of the first producers to offer single variety and origin cacao. Xoco operates in the Central American countries of Guatemala, Nicaragua and Honduras. In effect, Xoco’s vision is to rediscover this often regarded “poor man’s crop” by promoting the worth and flavour that each individual varietal has.
Once you’ve unwrapped Ruket’s vibrant packaging, you’ll find a bar that has sharp notes of tannin with a well balanced acidity. Layers of plums and mango develop as the bar melts. Finally, the bar is rounded off with a smokey finish making this a unique and complex bar. With this bar Ruket have continued Xoco’s vision in a true celebration of the Trinitario cocoa bean!
