The San Martin steps out from Potomac's focus on Costa Rican cocoa and moves onto the Peruvian which has been responsible for some excellent chocolate, not least from Zotter in the form of the 100%.
In terms of flavour we just love the novel interpretation of the bean here. You'll find a smoky edge combined with figs and a dose of spice. It's this complexity and variety of flavour notes that is just so compelling. The aroma may be touch dusty and the mouth-feel a touch on the dry side, but that's certainly no reason not to enjoy this chocolate.
