Crafted on the Isle of Wight, the cocoa beans for this bar were transported from the Dominican Republic on board the Tres Hombres. This traditional wooden sailing boat has no engine but relies on the wind and the waves (to be specific the currents) to deliver its delicious cargo across the world. As a result, this bar is not only Fairtrade but almost carbon neutral as well.
The beans for this dark chocolate bar are sourced from Conacado, a registered Fairtrade cooperative in the Dominican Republic, that is used by number of other makers including Soma, Taza and Omnom.
As a 100% cocoa bar, this is markedly more intense than the other bars we’ve tried from Seaforth. A rather heavy going 100% cacao bar, this retains some of the ripe banana notes found in in the 70% and 82% bars made from the same cacao. Seaforth uses large stone grinders to grind its beans, giving the bar a slightly coarse texture, which is a world away from the buttery consistency of other Dominican bars.
