With cocoa beans sourced from the same area as the splendid Domori Apurimac this much heftier chocolate (100g v 25g). This area used to be festooned with terrorists and now with them gone the local communities have the ability to sustain themselves, unhindered, through agriculture - and for us we can benefit from a modest number tending to their cacao trees and the fruits that are harvested twice a year.
Here we have a blend of cocoa varieties. We don't have specific details of the varieties available from that region, however in the neighbouring regions of Cusco and Ayacucho there is a high incidence local varieties, however, we wouldn't be surprised if there was a great deal of CCN-51 and Trinitario.
One of the aspects we like about this chocolate is that the natural intensity found with much of Slitti's chocolate is further enhanced with the inclusion of cocoa nibs.
