Solstice has to be one of the best new-comers on the American craft chocolate making scene and this bar made with beans sourced from the Orinoco River basin - an uncommon source in itself - is a perfect example of what Scott and his team are capable of. If you enjoy astringent chocolate that plays with a straight bat then this has to high up on your list of chocolates to try. The acidity is unavoidable in the nose which also gives a clue to the high roast which gives a chestnut backdrop.
With that core, simple flavour also exhibits a slight G&T with lime edge and even clotted cream. It may not be as complex and virgin-like chocolate made with coastal Venzy cocoas, but it still is highly enjoyable. It also should be considered by those that have explored all that Domori and others have created with cacao from Chauo, Ocumare, Puerto Cabello, Cuyagua and the like.
