From Canadian maker Soma, we bring you a bar made with some very special beans.
‘Nacional’ is the name given to the fine flavoured cacao bean variety originally from Ecuador. But recently some of the beans were discovered growing at high altitude in a box canyon in the Maranon River valley of Peru.
The kind of chocolate bar that is almost impossible to write about – every time we tasted it, different flavours came forward and danced on our tongues. Sweet notes of burnt caramel turn to treacle and molasses. Hidden underneath the dark sugar are hints of spice. Cinnamon, cloves and nutmeg melt together, giving the chocolate a hint of gingerbread, but without overwhelming the palate with strong spice. The finish is long and delicate. A little yeast mixes with the brown sugar flavours to leave a lightly malted note lingering on the tongue.
This bar has won bronze, silver and gold in the International chocolate awards.
