Something a little different from Soma. This bar is a half and half blend of Madagascan and Ecuadorian beans.
Soma’s has created a masterful blend that harness the flavours of both beans to create something highly distinctive. It takes a moment for the unmistakable licorice flavour to take shape on the tongue. The bar continues to develop: menthol freshness is laced with spice, and aniseed. With these aromatic notes come just a hint of earthiness from the Ecuadorian beans. On the finish, we detected a sudden flash of sharp berries, as a little more of the Madagascan bean is finally revealed.
Madagascar and Ecuador both produce cacao with very distinct flavour profiles, so blending them together is a challenge for any chocolate maker. The green and earthy characteristics of Ecuadorian cacao could not be more different to the red berries and roasted notes so familiar in Madagascan cacao.
Soma’s risk here has paid off and resulted in a bar that blends the characteristic of the two origins, revealing new and unexpected flavours. Blends are still relatively unusual in craft chocolate, where more often than not makers focus on harnessing the potential of a single bean. As this bar proves, blend can producing interesting results and we are sure we will more such combinations in future.
