This ‘Old School’ bar was crafted in Toronto by Soma. The sweet dark chocolate is stone-ground in a traditional way, like how chocolate bars used to be made 150 years ago.
Soma crafts this bar using just two ingredients: Jamaican cacao and organic whole sugar crystals. These are coarsely ground together in an old-school Melangeur (a vintage grinder acquired by Soma) to create a chocolate bar with a texture like nothing else.
This bar uses the same Jamaican beans as Som’s Black Science St Thomas Parish bar. The unrefined sugar crystals and cumbly texture dominate the milk bar. But we did detect a touch of sweet caramel spice.
For anyone familiar with Taza’s stone-ground bars, the Soma Old School Jamaica bears some similarity in texture but is still highly distinctive in appearance and mouthfeel. On first inspection, the bar looks more like a chocolate roulade or a baked brownie than a chocolate bar – the surface is cracked and swollen, almost as if it had been baked.
Break off a crumbly piece and bite into the flaky, messy bar. The texture has the light, airy quality of a souffle, and disintegrates in your mouth into sweet, crunchy shards. Eating this was a truly pleasant experience – the bar reminded us quite a bit of a flake. While much more sophisticated in texture and flavour than the humble flake, Soma has crafted a bar that gives us the same sense of fun as a child with a chocolate bar.
