This 100% from Stainer is similar to the Venezuelan in many respects but is much milder throughout the first 90% of the melt but then turns more saline. It actually is reminiscent of the Pacari 70% with salt to some degree. What comes to mind, in terms of suitability, is that this chocolate would be great for those that need or wish to remove added sugar from their diet but aren't yet in tune with the bitterness of 100% chocolate. Here this chocolate is milk, rich and creamy, somewhat on the lines of the Pralus 100%, and doesn't leave your mouth as dry as perhaps the Menakao 100%.
