Taza have been on our radar for a while as we're very fond of the rustic, coarse, unpretentious nature of their chocolate. We also love how they try and keep relatively close to the roots of chocolate with by grinding just roasted cocoa beans and sugar in a Molino - a stone mill.
At 85% and with minimal processing you may expect chocolate that's heavy on acids, but I'm sure you'll be surprised by the sweetness produced.
