Undone’s Dominican Republic dark has all the hallmarks we’ve come to expect from this origin.
The island nation produces cocoa beans renowned for their rich and intense cocoa flavour, and this bar is no exception. The bar has full chocolatey flavour that reminds us a little of a chocolate pudding. A delicate spice hovers under the bar’s smooth surface. We noted a hint of something slightly cooling and a splash of citrus towards the finish.
Undone’s co-founder, Adam Kavalier has a PhD in plant biochemistry and previously worked as a phytochemist. It was through his work on flavanols that Adam first became fascinated by chocolate. While he might have switched from chemistry to chocolate, there’s still some of the scientist in him. Adam tested his Dominican beans, and discovered that they had a particularly high concentration of antioxidants.
Aside from it’s chemical make-up, this palatable and pleasant bar, this is an easy to eat dark that we think will appeal to everyone.
