Undone’s well-crafted dark is bursting with the flavours of Nicaraguan cacao.
Unwrap the bar, inhale and notice the hint of smoke. The initial taste is a little muddy, but as the chocolate melts this is quickly followed by strong and spicy menthol. A sherbet undertone reveals hints of astringent tobacco. The spice builds into an aromatic cardamom finish.
As the melted chocolate swirls around your mouth, different flavours appear and fade, mixing and interacting as they develop. Go back for a second piece and you might discover new layers and complexities. On second tasting we noticed gingerbread, almost nutty note beneath the cooling, earthy flavours.
The Nicaraguan cocoa beans come from the Matagalpa region, in the centre of the country.
