The cocoa used in this Valrhona Ampamakia is the 2012 harvest of a blend of hybrid Criollo and Trinitario grown on the Millot plantation and despite being only 64% cocoa it produced a very tangy and fascinating chocolate with noticeable rich plum and citrus fruits experience.
This vintage bar is certainly one for lovers of fairly sharp, single origin bars that offer a very sophisticated and refined flavour but who wanted to avoid the bitterness of traditionally higher cocoa creations.
Given that this plantation has been growing and harvesting fine cocoas for over one hundred years and that Valrhona annually take a significant proportion of their output, you can just know this is going to be worth buying.
