This El Pedregal is one of three 'Vintage' single origin chocolates that Valrhona produce every year from plantations from some of the most important and cocoa growing countries. This one is made with fine Porcelana Criollo beans which accounts for only a very small percentage of the world's chocolate production each year and is noted for its floral flavour.
This plantation is actually owned by Valrhona and the past two decades have seen the company invest heavily in the terroir and facilities and that significant outlay has resulted in a pretty interesting bar of Venezuelan chocolate and is well placed when it comes to many other bars from the country.
