As with a href="http://www.chocolatiers.co.uk/products/valrhona-jivara-40-milk-chocolate">Jivara 40% Valrhona uses cocoa beans that might not be fashionable, but does something pretty spectacular with them. Africa isn't a continent that we associate with fine-flavour beans, that that doesn't mean that very good quality chocolate be made with them. There's also pitfall that many people learning about chocolate fall into, and that's the belief that any bean from Africa would offer less flavour than say some from Central America. The trick that great chocolate makers employ and is the extent to which they select the finest plantations within an area - and that's exactly what Valrhona have done with this bar.
The Abinao is a brutish bar more in-line with some of the 100% bars - and certainly thePralus 100% which has remarkably high cocoa butter content. This chocolate might not be as sophisticated as some, but will certainly add to your knowledge of chocolate and understanding of Valrhona as a chocolate maker.
