What a special bar of chocolate this is. The Amazonia is made with organic Criollo grown somewhere in the Amazonia basin and produces such a unique flavour that it stands out from the crowd of more established chocolate makers.
At the very outset of the melt, you should notice a red fruits profile to that of the Tumbes, and then it instantly changes. You’ll have orange peel, tequila and under ripe bananas. This will then develop an undercurrent of hazelnuts and finish with horseradish.
Very little chocolate, even of the Criollo broad varietal offers such a diverse range of notes. Of course, being stone ground, there is a good amount of rusticity, but it works out exceptionally well.
