This is the big brother of the award-winning 75% Amazonas and must be a brother by a different mother as this has a completely different flavour profile as its not seem to have the gravitas you would expect from an 89% chocolate - It's far lighter. There is a great deal of sharpness at the top end, but you can tell it's hand-crafted rather than from an automated process as it has a greater deal of rusticity and a more natural flavour. It's not been conched excessively, nor roasted extensively - it has more of a virgin flavour. Indeed, you could even say there's a great deal of the metallic edge you would expect from a raw chocolate.
