Raw chocolate can have a very metallic flavour; well every bar I've tried seems to have a strong 'tin' undercurrent. But what startled me most about this bar is that it has a far more creamy flavour and texture than any other raw chocolate bar I've tried in the past. It does have a very slight metallic, spicy finish to it, but that is just a wonderful juxtaposition to the child-like flavours you'll witness when you start to crunch.
If you chew straight away it's very pleasant, but if you do as the insert suggests and lift it to the roof of your mouth and play with it gently with your tongue then you'll get a whole new experience - it's incredibly nutty and so engaging.
Another aspect of raw chocolate that can be to its detriment is the texture. This bar from Zotter is as smooth as a highly conched bar. There's no granular grittiness, no rough edges, just a delightfully smooth texture.
The whole point of raw chocolate is to obtain more of the possible health-enhancing poly-phenols which some say help combat the free-radicals we seemingly can't avoid in our daily lives. There is an issue of what you can call 'raw chocolate'. The most raw of chocolate is the cocoa bean - un-roasted, un-fermented (which heats up the beans) and straight out of the pod. It's unlikely any would find that palatable given the modern day taste for smooth, non-caustic chocolate. Here the beans are neither fermented nor roasted so a significant part of the heating process is avoided. There is, however, some heat 'treatment' in the conching (refining) process that takes the liquor up to 60C. This is still a great deal more raw than most chocolate on the market.
To me, however, the most important aspect of this bar of raw chocolate is the utterly wonderful flavour. Somehow it marries the sweetness expected of chocolate, with the acidity expected of fine chocolate. This has the potential to be my most favourite Zotter chocolate bar.
